Maybe it’s just bad luck, but my costco ribeyes have always been on the tough side with crazy dense and rubbery fat that is unpleasant to chew. They always look great with lovely marbeling, but the end result has been underwhelming compared to the results I get with the whole foods alternatives.

Costcos prime ribeye, tenderloin, and sirloin are the only steaks I buy anymore.
The cost is reasonable compared to my limited choice of local butchers and the quality has been phenomenal in my experience.
Anyone saying just go to a restaurant at that price point either A) has never been to a decent steak house and bought a 20oz PRIME ribeye($$$$) B) are mad they don’t know how to cook a steak perfectly at home.
Reverse seared a couple of these and a couple pieces of prime tenderloin on the BGE a couple weeks ago and I would have gladly put them up against any steakhouse within 75 miles of where I live. All in, probably had $150 in feeding 4 people and enjoying a nice bottle of cab together. Can’t beat it.

Look at the label. They’re blade tenderized. I personally don’t like to buy steaks like that. For safety it’s not recommended to cook them medium to medium-rare whichi is where it seems most people like their steaks. You have to cook them a bit more well-done.
I wouldn’t say it’s a bad deal though. Just not my preference.

Couple of things with Costco steaks. First of all, they are blade tenderized. They pump the steak full of a solution to tenderize it, which has the potential of introducing bacteria into the heart of the steak so if you like it rare that’s a risk. Secondly I don’t know about you, but they don’t have much flavor. Yes they’re prime and their greasy but they lack meat flavor. It’s almost like everything at Costco is produced on a mass scale and bland, including the damn cows. Anyways my two cents.

Much better a leaner steak with no gristle than a marbled steak with lots of gristle.

Costco makes 96% of its profit from memberships. They break even or lose money on most of the products sold there. So you can often find really good prices.
