This has been my go-to lately. Light, delicious, and easily adjustable based on what you have in the fridge/pantry. Also, everything is well-priced!

Spiced chicken (I used tenders and just cut them into bites and sautéed them), tzatziki, hummus, pickled red onion, kalamata olives, crispy chickpeas, cucumbers, all over garlic rice.

    I was thinking of mediterranean bowls soon. Sounds really good. Mine’ll have pickled turnip instead of onion.

  2. I looooooooove making Mediterranean bowls for lunch. They’re so easy and relatively inexpensive to make in bulk, and I can switch the ingredients out if I want variety. I do half a cup of quinoa or brown rice, a cup of assorted chopped veggies (cucumber/carrot/radish is my current go-to), a serving of beans, mix it all up with a tablespoon or two of hummus, and then sprinkle some feta or Parmesan over top. Tasty, healthy, and keeps me full.
