Course 3 (forgot to take picture of my favorite!!): red mullet with tomato, chorizo, sepia, choron

Course 4: Kagoshima Wagyu A4 with onion, black garlic, Imperial Heritage Caviar

Course 5: roe with aspargus, wild garlic, morille, juniper

Course 6: soufflé with vanilla from Tahiti with quince and chervil
