  1. Healthy Chipotle Burrito Bowl.

    Recipe (makes 2 bowls):

    Chicken: preheat oven to 350. cut 2 chicken breasts into cubes and add to a bowl. add 1 tbsp olive oil, 2 tbsp., kosher salt, 1/2 tbsp. chili powder, 2 tsp. garlic powder, 1 tsp. onion powder, 1/2 tsp. ground cumin, 1/2 tsp. ground black pepper, 1 freshly squeezed lime. mix until chicken is thoroughly coated and add to baking sheet. Bake for 10 minutes.

    Corn Salad: in a bowl, mix together 1/2 cup of corn, diced cherry tomatoes, and diced red onion. Add 1 small bunch of chopped cilantro. Add the juice of 1 lime, and salt and pepper to taste

    Sauce: blend together 1/2 cup cottage cheese, 1/2 tbsp sriracha, juice of 1/2 lime, 1 garlic clove, 1/2 tsp cumin, 1/2 tsp salt, 1/2 tsp onion powder, pinch of pepper

    Bowl: brown rice, chicken, 1/2 sliced avocado, corn salad, black beans, cilantro, mozzarella cheese
