Ingredients:
For the Ribeye Rub (for 4 steaks):

4 tbsp Ancho chilli powder
4 tbsp finely ground espresso
2 tbsp Paprika
2 tbsp dark brown sugar or coconut sugar
1 tbsp dry mustard
1 tbsp kosher salt
1 tbsp ground black pepper
1 tbsp ground coriander
1 tbsp dried oregano
2 tsp ground ginger
2 tsp Aleppo pepper

For the Ribeye Steak:
1-4 Boneless Ribeye Steaks (2 inches thick each)
Salt & Pepper to taste

For the Herb Butter:
1 cup butter, room temperature
1 tbsp parsley, finely chopped
1 tbsp garlic, minced
1 tbsp shallot, finely diced
1 tbsp chives, finely minced
Salt & Pepper to taste

Instructions:
In a medium-sized bowl, combine the room temperature butter with the finely chopped parsley, minced garlic, diced shallot, and minced chives.
Season the mixture with salt and pepper to taste.

Spoon the herb butter mixture onto a sheet of cling film, shaping it into a log. Twist the ends of the cling film to seal.

Place the herb butter log in the refrigerator and allow it to firm up.

Prepare the Ribeye Rub:
In a separate bowl, combine all the ingredients for the ribeye rub. Mix thoroughly to ensure an even blend of spices.

Season the Steaks:
Take your ribeye steaks and allow them to come to room temperature.

Generously rub the spice mix into the steaks, ensuring that each one is well-coated on all sides.

Lightly season the steaks with additional salt and pepper to taste, if desired.

Cook the Steaks:
Preheat your air fryer to 180ยฐC (360ยฐF). Place the seasoned steak in the air fryer basket.

Cook the steak for 10 minutes each side to achieve a medium to medium-rare doneness. Adjust the cooking time to your preference for rare or well-done steaks.

Rest and Serve:
Once cooked, remove the steaks from the air fryer and let them rest for a minute. This allows the juices to redistribute within the meat.

While the steaks are resting, slice a piece of the herb butter log.

Serve the ribeye steaks with a slice of herb butter on top. As the butter melts, it will add a rich, aromatic flavour to the steak.

Prepare a simple salad by tossing greens with a drizzle of lemon juice and olive oil. Serve the salad alongside the steak for a fresh, vibrant contrast.
