Ingredients
Chicken Marination
Chicken Breast 02 Pieces
Olive Oil 1 tbsp
Salt ½ tsp
Red Chilli 1 tsp
Black Pepper ½ tsp
Stuffing
Feta Cheese 50 grams
Blanched Spinach 50 grams
Salt & Pepper to Taste
Mushroom Sauce
Cooking Oil 01 tbsp
Chopped Garlic ½ tbsp
Sliced Button Mushroom 4-5
Chicken Stock 200 ml
Flour 1 tbsp
Chicken Powder 1 tsp
Dairy Cream 02 tbsp
Mixed herbs ½ tbsp
Black Pepper ½ tsp
(* Add salt as per taste if stock is unsalted)
Method:
Step 1 (Mushroom Sauce)
1. In a pan, add cooking oil.
2. When oil is heated, add chopped garlic.
3. Sauté the garlic and add mushrooms.
4. Saute mushrooms for 2-3 mins, then add chicken stock.
5. Add flour, chicken powder and cream and cook for a while.
6. Add mixed herbs and black pepper.
7. Cook till consistency is thickened.
8. Put mushroom sauce in a bowl.
Step 2 (Chicken Marination)
1. Cut the chicken breast from the center.
2. Marinate chicken with salt, red chili, black pepper and olive oil.
3. Set aside marinated chicken for 30 mins.
Step 3 (Prepare Cheese Mixture)
1. In a bowl, add feta cheese, blanched spinach, salt and pepper and combine the ingredients.
Step 4 (Stuffing of chicken breast, searing and baking)
1. Stuff chicken breast with cheese filling and roll it and close edges with toothpicks.
2. Add oil to a grilling pan and sear chicken breast rolls from all sides for 2-3 minutes.
3. Take out chicken breast rolls in a baking dish and bake for 20-30 minutes at 190 C.
Step 5 (Serving)
1. Slice baked chicken and serve with mushroom sauce.
2. You can serve with veggies and mashed potatoes.
