    Big old round steak. You hardly find these anymore. My Mother used these to make some killer Swiss steak. More of a braise type steak than a grilling steak..

    Had these in the 70s, the butcher called um spoon bone steak. Delicious on the grill, they are huge.

    It’s a wonderful part of cow but it’s not the best for grilling.
    Best way to Cook It, it’s by slowly extracting his juices with some sauce.
    In Rome we make It boil with Red wine and tomato Sauce (for a Red dish) or if you don’t like tomato, you can put It in a Pan with butter lemon and onions.

    Not sure what they are called but got a bunch with my last side of beef, I’ve cooked a few but the best way I’ve found is a reverse sear on the pellet grill, cooked it rare and a compound butter on top.
