Caputo flour
62% water
0.2% fresh yeast
1.5% salt

6 hours RT
23 hours CT

I dried out the cheese overnight in the fridge, it helped with lowering the water content of toppings, but I think less time drying out would be better. That's why it looks yellow.

Need to switch to a fine semolina when shaping dough.

Will try a double fermentation (48hr) next time.
