But for those who are new to bakers percentages… The baker’s percentage is a notation method indicating the proportion of an ingredient relative to the flour used in a recipe. It’s computed as the weight of a particular ingredient divided by the weight of the flour. Since the weight of the flour in this pic is zero that is an infinitely hydrated loaf. A 100% hydration loaf is when the weight of the water equals the weight of the flour
