500 g Bread Flour (100%)
300 g Water (warm) (65%)
150 g Sourdough Starter (30%)
10 g Salt (2%)
Autolyzed for 1 hour
5 stretch and folds every 15 minutes
Bulk proofed for 2ish hours
Shaped and put in banneton for 1 hour
Baked 450f for 30 minutes in Dutch oven, 15 minutes with lid off

Why wouldn’t you be. It’s so easy and tastes like 20000000 times better than buying anything at the grocery store. Plus you know what’s in it and where’s it’s been.
