Short stint in Copenhagen last month. Did AOC (previous post) and Aska popup in Tivoli

Dishes:
1) Tart with vendace roe marinated in lilac vinegar | Blue mussel and sea oak.

2) Danish king fish, Oscietra caviar and smoked eel.

3) Kohlrabi compressed with linden leaf oil and linden flower vinegar.

4) Crème Royale with tail of lobster, trout roe and essence of carrot flower.

5) Live scallop from Norway with white turnip and blackcurrant leaf.

6) Grilled tail of langoustine from Norway with a sauce of the caramelized shell and red gooseberry.

7) Turbot with Tsar Imperial Beluga caviar, Swedish dark beer and flowering dill.

8) Bread and butter (malted barley and pine mushroom) serving.

9) Grilled sea bass, black sunchoke, sauce of roasted cabbage and toasted hay

10) Buttermilk infused with chamomile and blueberries macerated in green strawberry juice.

11) Milk sorbet with grass-fed cream and meadowsweet cordial | Madeleines and salted blueberry | Rye leaf and clover | Salted liquorice marshmallow
