I’m following the Ball Cowboy Candy recipe, but there’s not enough liquid to cover the peppers. Is that normal or did I screw up?

    They will probably cook down. If you still don’t have enough liquid you can mix more brine using the correct ratio of you’re not making the full amount in the recipe. heat and use to top off jars.

    What scale did you use to measure the 4 lbs of jalapeños? How did you measure the vinegar? Sugar?

    The jalapeños will release some juice as they cook down. I’m not sure if it will be that much, but cook them and see.

    I have made this twice. They all cooked down for me and I even had a little extra brine to make some pickled eggs for the fridge.

    Mine cooked down to be sufficient granted everything was weighed correctly

  7. They always look like that at first! They will cook down. I use this same recipe.

    I just doubled the brine recipe – added my peppers and let er rip. You have to double the entirety of it – vinegar etc. I was worried at first but honestly they all cook down and probably would have fit.
