Made an easy hot sauce with garlic, onion and vinegar

Simmered the below in 3 cups of vinegar and 1 cup of water for 25 minutes
* 2 lbs onion * 1/2 lb carrot * 1 jumbo bulb of garlic (yes 1 whole bulb about 12 good sized cloves) * 5 habaneros * 4 jalapenos
Put everything including liquid into food processor (you can use a blender too) and added a few squirts of lime juice, some cumin and onion powder and pureed.
Strained the juice from puree into a bottle.
Added half the leftover mash back to food processor and filled with an equal amount of strained juice and pureed again and added it back to bottle to give it some more thickness. You can do this as needed to make it more thick or you can add olive oil to thicken it too otherwise it is a little watery like tabasco sauce kind of.
If you do not like vinegary hot sauces you can adjust the vinegar and water balance.
You can add salt as desired but I wanted to make a sodium light hot sauce for people with high blood pressure.
Great spicy oniony garlic flavor!
Forgot to mention it should make 4 to 4.5 cups depending on the size of your peppers.
