Lentil Greek Salad 🥗

Ingredients:

1 can lentils (or 1.5 cups), rinsed & drained
4 baby cucumbers, finely chopped
1 pint cherry tomatoes, chopped
1 green pepper, chopped
½ cup kalamata olives
½ cup roasted red peppers, chopped
½ cup red onion, chopped
1/4 cup chopped parsley or dill (optional)
½ cup feta, crumbled
Dressing:

¼ cup olive oil
2 tbsp red wine vinegar
1 tbsp balsamic vinegar
1 tsp honey or maple syrup
2 tsp dijon mustard
1-2 tsp dried oregano
Salt & pepper to taste
Instructions:

Combine Salad Ingredients: In a large bowl, mix together lentils, cucumbers, tomatoes, green pepper, olives, roasted red peppers, red onion, and parsley or dill.
Make the Dressing: In a small bowl, whisk together olive oil, red wine vinegar, balsamic vinegar, honey or maple syrup, dijon mustard, oregano, salt, and pepper.
Toss and Serve: Pour the dressing over the salad and toss to combine. Top with crumbled feta and enjoy!
