Made Blackberry Jam – Does Gap Matter?

    I made blackberry jam for the first time using the recipe in the comments (I had 258g of blackberries, so adjusted accordingly). I prepped the jar by putting it in the oven at 110°C for 10 minutes. The vacuum formed properly.

    However, the gap between the jar and the lid has me worried that something could go wrong? Does having a gap matter in canning, as long as there is a proper vacuum?

    Assuming you used a safe recipe / method, that is a gorgeous jar of jam!

    I believe the official answer is that headspace matters before the processing, but the resulting headspace isn’t guaranteed or critical. It usually comes up with veggies or food that might discolor if they aren’t fully covered with liquid, but I personally can’t think of a reason it would matter for jam, if it didn’t leak out and mess up the seal.

    Did you measure the headspace by the recipe prior to processing?

    The recipe you provided does not include instructions for water bath processing. Did you water bath the jars after filling them with the hot jam?
