Made fresh pasta using 00 flour and eggs from our own chicken.
Sauce is made with a soffrito and 6 cans of san marzano tomatos.
Simmered for a hour with the lid on, after its simmered with the lid of for around 15 minutes to let the little bit of water out.
Added salt and pepper to taste.
Removed from the heat and added basil.
It will be left overnight to absorb the basil flavours.

I was actually thinking of doing that recipe this weekend! Just wish I could have the fresh pasta to go with it.
