The label said "rib cap", but from what i saw, this piece appears to be too lean for that.

I have four similar pieces for dinner.

    Looks like beef tenderloin to me. One of the best cuts of meat you can buy.
    Best way to make this, is to cut them into 1 to 1.5 inch slices. And make them like steaks on the grill till medium rare(135 degrees).

  2. I really can’t tell. Best thing to do is cut a small piece, sear it and try chew it to see if this requires fast cooking or slow… or grinding?
