So here's today's lunch recipe!
Total cooking time around 25 minutes
Ingredients:
1 pork fillet (1,5 cm thickness), 2 tablespoons pepper paste, small Greek green peppers, cherry tomatoes, red wine, 1/2 teaspoon honey, several spices: Oregano, thyme, rosemary, basil, sweet chili, chili flakes (optional) salt and pepper.
Execution: Sprinkle olive and the spices on the fillet on both sides (let it marinate half a day if you wish). Cook in the oven(preheated) or air fryer for 8-10 minutes each side at around 200 Celsius (for well done, adapt based on your oven or air fryer). Add the peppers in the pan the last 5 minutes as they need way less time.
For the sauce, put in a bowl the wine,olive oil, all spices, the pepper paste, cherry tomatoes and honey and mix them with a spoon. Now throw the mixture in the pan with the fillet and peppers and put it back in for another 5-6 minutes. Until the salsa becomes smooth and all the excessive water is gone. Serve with feta, Greek yogurt or tyrosolata. Tip you can replace the peppers with any peppers but it's amazing with eggplants and/or carrots too! Didn't have any myself today so opted for what was available.Enjoy!
