Chicken Piccata

Ingredients
1 1/2 lbs chicken breast
1/3 cup flour
4 garlic cloves, minced
1 cup chicken broth
3 tablespoons lemon juice
2 tablespoons capers, drained
4 tablespoons butter, divided

Directions
Slice chicken in half horizontally, place parchment paper or plastic wrap over the top and pound evenly.
Season chicken with salt and pepper and dredge into flour.
Heat oil in a pan and cook chicken until cooked through, about 3-4 minutes per side. Remove and set aside.
Melt 1 tablespoon butter and sauté garlic for 20 seconds.
Stir in chicken broth, lemon juice and capers. Season well with salt and pepper and cook for 2-3 minutes over medium heat.
Return chicken back to pan along with the rest of the butter. Once butter has melted remove from heat.

  1. This video made me so hungry. At the very end, when the fork comes up and you finally get to actually taste it, but then the video ends – that's cruel.
