I usually only make a fresh pico-like salsa, with jalapeños and serranos. I've been seeing a lot of posts with people tossing a tray of goodies in the oven and really wanted to give it a shot. I especially wanted to try out different ingredients that I'd shied away from before. So here's my third attempt!

400° in the oven for 30min. Halved everything and de-seeded. Oil brushed romas, tomatillos, a hatch chile, couple serranos, few jalapeños, white onion, and garlic. Lime, cilantro, cumin and salt added after. Not pictured, I tried toasting guajillos for the first time and doing the water bath treatment. I threw two of them in the food processor along with everything else after I removed the skins. I'm just excited to try out more.

    Looks pretty good. Needs a whole bunch more cilantro for my taste however.
