This easy blueberry pancakes recipe I’ll be showing you is not only dairy free but it’s also sugar free, and low in both sodium and cholesterol. Ingredients:
Fresh Blueberries (Not Frozen)
Baking Powder
Sea Salt
Monk Fruit Sugar
Eggs
All-Purpose Flour
Unsweetened Coconut Milk
Plant-Based Butter

Exact Measurements:
1 1/2 Cup All-Purpose Flour
1 teaspoon Sea Salt
3 1/2 teaspoons Baking Powder
1 Tablespoon Monk Fruit Sugar
1 Large Egg
1 3/4 Cup Unsweetened Coconut Milk
3 Tablespoons Plant-Based Butter (For Skillet, 1 TBSP Per Pancake)
3/4 Cups Fresh Blueberries

Instructions:
Add the flour, sea salt, baking powder, and monk fruit sugar to a medium size bowl. Use a whisk to incorporate the ingredients. Add the egg, unsweetened coconut milk, and blueberries. Use a wooden spoon or silicone spatula to incorporate the ingredients, until you end up with a smooth pancake batter. Add the plant-based butter to a large skillet over a medium high heat. Allow the butter to melt. Use a measuring cup to evenly measure out the blueberry pancake batter and place it into the skillet. Once the top of the blueberry pancakes begins to bubble and the edges begin to turn golden brown, turn the blueberry pancakes over and allow the other side to cook. Once the dairy free blueberry pancakes are done remove it from the skillet, place it onto a paper plate and repeat the process until all the blueberry pancake batter is gone.
