I tasted the rainbow tonight thanks to my farmers market haul.
Sun ripened, local vegetables are so much tastier.
Roasted zucchini, eggplant, red and orange bell peppers, purple okras, purple cherry tomatoes, celeriac, shishito peppers, lions mane, lemon, steamed broccoli, hard boiled quail eggs, smoked Kalamata olives, blue cheese stuffed green olives, dry cured olives, arugula and onion salad.
I paired this bounty of vegetables with rosé Prosecco
