2 Manila mangoes
1/3 small yellow onion
5 habañeros
1 clove garlic
2 lime
1 tsp salt
Splash of neutral oil (canola etc)
Roasted onion, halved habañeros and garlic under broiler for 3-4 minutes (until habañeros started getting black spots), pureed with mangoes, lime juice and salt, added maybe half a cup of water to dilute plus a splash of oil to emulsify. Yielded 16oz.

Yum!! Those on some chicken tacos or flautas 😮💨
Looks delicious!
This is such a great staple sauce. I love making this at home.
Saving this!!!
Just because I only figured it out a few years ago, and I’m old, there is no tilde (~) above the n and it’s pronounced habanero(like Canyonero!) not haban-yero. Salsa looks great.
Where are the bottles from?
Minor aside – you took the time to put the tilde above the n every time you wrote habanero, but it unlike jalapeño it actually doesn’t belong there. It’s written (and pronounced) without the squiggle!
Salsa looks awesome 🙂
