One of the hottest and newest restaurants in Paris an omakase at Hakuba at Cheval Blanc Paris

We arrived early so we were in lobby for 5-10 mins after that we were guided at our table we didn’t took apéritif we started with snacks I like chawanmushi and soon started with first course I opted for a sake pairing which were 4 glasses one of them was iwa 5 which is pretty popular cause of founder who was chef de cave for Dom Perignon

Started with tuna marinated in soy with peach jelly the sweet and savory was paired so well
Had variety of nigiris one that catch my eyes was grilled oyster as I never had that nigiri before

Tamagoyaki was so good eggs was fluffy and with extra 40 you can have caviar temaki and as palate cleanser we had mushroom broth Somen noodles and I never had Somen before it was so thin and had different texture it was very soft but fairly chewy
For dessert we had crisp made with black rice and icecream, assortment of mochi( couldn’t add pics) and maki roll made with strawberries and matcha in between which was the prettiest one and also delicious

Overall it was a really good omakase but expensive.
