Olive Tapenade & Burrata Crostini

Ingredients:
2 cloves of garlic, minced
1 jar kalamata olives, partially drained
1 jar green olives, drained
1 tbsp capers
2 anchovy filets (we used Cento)
2 balls of fresh burrata
1/4 bunch of parsley, divided between tapenade & garnish
1 tbsp black pepper
olive oil
truffle oil for drizzling (use olive oil if you don’t have truffle oil)
crostini (or fresh bread if preferred)

In your Nutribullet or blender, add garlic, olives, capers, anchovies, 1/2 of the parsley and 1-2 tbsp of olive oil. Blend until a rough blend forms (do not overdue it – should not be too loose). On each crostini, pull open a couple of pieces of burrata, top with tapenade and garnish with parsley and some black pepper. Drizzle with truffle oil (or olive oil). Serve on a platter.
