    Hey all! I really wanted to take a second and recap this past year, as it has been a new beginning and SO much has changed for me, both physically and mentally. I wanted to thank many of you here for all the help and guidance along the way, and to give encouragement to all those new here. One year ago today, I was in surgery and came out with 3 stents in my heart. Even though my cholesterol was being managed and within the ‘normal’ range, I had complete blockage in one artery and 99% blockage in another. The surgeon, whom I had never met before, didn’t say much other than showing me a few pictures of the before/after of my heart, and he said ‘Mediterranean Diet’, and you need to be below 60 (referring to cLDL). So the journey began, and I’ve made both diet and exercise a priority. I would never have thought I would love veggies SO much, and, to my surprise, I don’t miss the red meats or fast food. I enjoy making all my own bread, and gardening has become soo rewarding!

    Do you share your recipes on your IG? I’m keenly interested in the bread and pizza dough; I’ve yet to find whole wheat varieties I’m happy with, and those look fantastic!

    Can you comment on your food costs. (edit – not the actual dollar amount but just in general comparing to a diet that is not as healthy)

    I find the cost very very reasonable and much lower than expected to eat healthy. Many who are new to this way of eating expect the cost to be way too high compared to their usual food choices.

    Awesome!! I lost 44 lbs in two months from August-October 2023 but then went off of it. Good thing is, as of this morning, I’ve only gained 12 back.

    Thanks for sharing. My doctor told me to do no carb for my triglycerides, but the dietician said mediterrainian. And it’s a joy to see your triglycerides dive.

    I give my sincerest congratulations on your change and recovery, I myself have SVT (applied for disability a month ago) and although I was in the ER two months ago, I said enough was enough and started the Mediterranean diet myself…….it has been a real and unbelievable game changer though still have palpitations every day – seeking treatment once I’m seen by my doctor – I have begun to love cooking and seeing the concoctions I’m able to make knowing it’s not processed nor packed full of toxic additives.
