Spinach and Arugula Salad with Pears, Burrata, and Prosciutto

Ingredients:
• Baby spinach
• Baby arugula
• Ripe pear, thinly sliced
• Burrata, torn into pieces
• Prosciutto, torn into smaller pieces
• Red onion, thinly sliced
• Balsamic glaze (optional)

Dressing:
• Extra virgin olive oil
• Balsamic vinegar
• Honey
• Dijon mustard
• Salt and lemon pepper to taste

Instructions:
1. In a small bowl or jar, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and lemon pepper until well combined.
2. In a salad bowl or on a serving plate, combine the baby spinach and arugula.
3. Drizzle the prepared dressing over the greens and toss gently to coat.
4. Add the sliced red onion, thinly sliced pear, torn pieces of burrata, and torn prosciutto.
5. Drizzle some balsamic glaze over the top, if desired.
