  1. Made this as I went, wanted to use up a bunch of produce! I cooked down onion, eggplant, carrots, apple, and a bunch of tomatoes with garlic, tomato paste, and a variety of spices (ginger, galangal, lemongrass, curry powder, bay leaves, turmeric, parsley). Once it cooked down, I blitzed it with an immersion blender. At the end I added a small amount of unsweetened coconut milk and chickpeas. Ate it with some crusty homemade bread!
