As long as you still have brine more than halfway up the jar, you are fine. Whatβs poking out above the liquid will probably change color, but itβs safe.

These look fine. I would guess what had happened is that the beans shrunk in the canner (which happens) and it all looks lower now. Mine have looked like this as well and been totally fine.

The other folks are right it should be fine. It has been my experience that siphoning is caused by too rapid cooling, Per the ball blue book, after the processing time expires turn the heat off and remove the lid and let it sit for an additional 5 minutes
