Pizza Chicken
I love one-pot meals, sheet pan meals, crock pot meals, 30-minute meals, and anything that will get the job done quickly, result in a tasty meal with minimal effort. This is supposed to be a one-pot meal but I’m making the sauce homemade. You can use jarred if that’s what you have on hand.
This recipe is great because it takes the flavors of pizza which everyone loves and craves and eliminates the carbs. There are no rules to this recipe, once you know the basics, chicken, sauce and cheese, after that it’s all up to you to customize mo differently than you would if ordering a pizza. Go crazy! If you love Canadian bacon and pineapple, heres your chance to shine! Want something a bit more vegetable based? Go for it!

Ingredients
4 chicken thighs or 2 chicken breasts split
Italian seasoning for seasoning chicken
Garlic powder for seasoning chicken
1/2 onion diced
1 TB garlic
1/2 cup bell pepper diced
1/2 cup bell pepper in strips
Ghee for sautéing
salt and pepper
1 can of tomato sauce
1 package chicken sausages
2 cup shredded part skim mozzarella cheese
8 slices provolone cheese
1/4 parmesan cheese
package nitrate free, GF pepperoni
1/4 cup sliced black olives
Chopped fresh basil for garnish
Instructions
Preheat oven to 375°
In a skillet heat a TB ghee and sauté diced onions and diced bell pepper until translucent. Add garlic and bell pepper strips. Add tomato sauce and 1 TB Italian seasoning, salt and pepper to taste. Transfer to a bowl. Wipe pan clean. Heat another TB ghee and season chicken with garlic powder, Italian seasoning, salt and pepper. Brown meat and sausage, just adding color, not cooking. Cover with sauce, and build your pizza! Pepperoni, olives, cheese, provolone and parmesan. Bake in oven 15-20 minutes until chicken is internal temperature of 165° and cheese is melted and gooey. Let rest on counter for five minutes and Enjoy!
