Day 675 hard meal plan was another simple, fast dinner that filled it home with aromatic goodness. Chermoula is similar to chimichurri with lots of cilantro and parsley. it’s a wonderful marinade for white fish. here is the recipes!

Moroccan Fish Chermoula

Ingredients:
4 white fish fillets (such as cod or halibut)
1 bunch fresh cilantro, chopped
1 bunch fresh parsley, chopped
4 garlic cloves, minced
1 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
1/2 tsp ground turmeric
1/4 cup olive oil
2 tbsp lemon juice
Salt and pepper to taste
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 onion, sliced
1 tomato, sliced

Instructions:

In a bowl, mix the cilantro, parsley, garlic, cumin, coriander, paprika, turmeric, olive oil, lemon juice, salt, and pepper to make the chermoula sauce.
Marinate the fish fillets in the chermoula sauce for at least 30 minutes.

Preheat the oven to 375°F (190°C). Arrange the sliced vegetables in a baking dish and place the marinated fish fillets on top. Pour the remaining chermoula sauce over the fish and vegetables.

Bake for 25-30 minutes until the fish is cooked through and the vegetables are tender.Serve hot with couscous or rice.

Couscous with Dried Fruits and Almonds

Ingredients:
1 cup couscous
1 cup chicken or vegetable broth
1/4 cup golden raisins or chopped dried apricots
1/4 cup slivered almonds, toasted
2 tablespoons olive oil
1/2 teaspoon ground cinnamon
Salt and pepper to taste
Fresh parsley for garnish

Instructions:
Bring the broth to a boil in a saucepan. Stir in the couscous and dried fruits, cover, and remove from heat. Let sit for 5 minutes.

Fluff with a fork, then stir in the olive oil, cinnamon, toasted almonds, salt, and pepperGarnish with fresh parsley before serving.
