  1. I would be curious to see how a sprinkle of nuts would work with this. I like a lot of crunch in my salads. Maybe chopped walnuts?

  2. As a little girl in Greece, my mom would always give us watermelon and feta in the summer after swimming at the beach… that was 50 years ago, and her mother did the same 50 years before that! 😁

  3. Julia and Kent Rollins must be making enough food to feed 2 cowboy groups. Each day of a massive new dinner (not to count a huge breakfast and huge lunch) … and there has to be a whole group of Hungrymans there … or Julia is feeding the local homeless population.

  4. FYI: If y'all haven't seen or hear about it, there's some HUGE problems when it comes to watermelons.
    It's horrible.
    Watermelon is my favorite fruit.
    There's many videos on YT.

  5. I peel the cucumbers. Love it with some black olives … Skip the parsley, add chopped heart of iceberg lettuce …. I use lime, not lemon.

  6. I had this at a restaurant once, and fell in love with this unlikely pairing (watermelon and feta). Their dressing was a kind of champagne vinaigrette, and they served it with arugula, pickled red onions and mint. Your version looks delicious.

  7. No need to add lemon juice since the feta is acidic enough. Also try using mint instead of parsley.

  8. I like making this salad though i usually don't use cucumber. Sometimes I mix in baby spinach leaves and pickled onion instead of the shallot. I'll try it this way next time

  9. I make something very similar. I just add cantaloupe and mint to mine. It’s so good and refreshing on a hot summer day!
