While not a “Mediterranean diet” cookbook, I have found so many of Mollie Katzen’s recipes helpful when trying to think of ways to make my veggies more exciting. These are pretty healthy recipes (all vegetarian) with lots of options for mains, soups, dips and a few yummy baked goods. And lots and lots of legume recipes! I grew up on this book and am so glad to have it as a part of my collection!

    One of the first cookbooks I ever bought. I wore out Sundays at Moosewood so badly, I had to buy a second copy.

    I’ve had this cookbook for two decades and have probably used it more than any other cookbook. It’s been a while, though. I should bust it out again. I think my go-tos were falafel, Mexican red sauce and mushroom moussaka.

    YES! I learned about this from the Original South Beach diet (which was based on the Mediterranean diet).

    I’m especially fond of the gazpacho, baba ganouj (grill the eggplant until it gives up and collapses), Sri Wasano’s Infamous Indonesian Rice Salad, and tabouli (not a proper tabouli, more like a tabouli-ish salad). I’ve been making all of these regularly for over thirty years and never get tired of them. Lots of other great recipes in there too, but these are my go to meals.

  8. I was raised on Moosewood recipes. They’re so easy to make, and the illustrations and art are darling. I once saw Mollie Katzen in real life and had to control myself from fan-girling out. She’s the best.
