Traditional buffalo and honey sriracha. What sauces should I do next week?

    Looks great, I like doing a spicy version of a Japanese BBQ.  Bachans Japanese BBQ sauce, a little rice vinegar, and some dried Asian Red chile blend from Flatiron Pepper co. plus some fresh grated ginger and minced green onion.  I let that all sit together to rehydrate the chile flakes while I’m cooking the wings, always goes over really well at parties along with traditional buffalo.

    I recently got a Vortex and I absolutely love it. I’m using it for basically everything.

    I need to experiment with flipping it over if I need a larger high heat zone, I’m thinking for burger for example.

    I did wings last night too! Since you already do traditional buffalo, try setting some aside and mix it with your favorite “regular” BBQ sauce.

    Suggestion:

    Try this with Leg+Thigh quarters. Cut them in half, so you have a leg and a thigh, then otherwise cook them pretty much the same as you’ve done here, maybe a little longer since they’re bigger.

    Quarters are just so much cheaper, in the realm of 3-4x less expensive per pound than wings. And the flavor is just as good.

    I know wings have a special appeal to people, just the shape and size and texture etc… but these days I barely ever buy them because I just can’t justify paying 3-4 bucks a pound to have tiny bone in pieces.

    If spending over 30 bucks for the fancy tool which keeps the fire in place, try fire bricks or pavers instead

    They’ve become a weekly thing at our house too. So good and with the vortex quick easy and yum.
