My first bagels 😍


I used this recipe : https://thia.codes/newbagels.html

I used pizza flour (W = 360, 14% protein). Too lazy to find malt syrup, I boiled them in water + honey + salt + baking soda. The result is amazing, very chewy and tasty.

I stuffed the bagels with shallots/chives whipped cream cheese (with milk, makes the cream cheese very spreadable and delicious), smoked salmon, avocado. So so good.

    Looks really good! Brown sugar is a pretty acceptable substitution for malt syrup in the dough. Which exact flour was this?
