Homemade Wurst on Kaesespaetzle and Caramelized Onions

    **Wurst Ingredients**

    * 3000 g Pork Shoulder
    * 1000 g Back Fat
    * 200 g Rusk
    * 400 g Water
    * 200 g Fresh Green Herbs (Sage, Leek, Green Onions)
    * 60 g Salt
    * 4 g Black Pepper

    **Spätzle**

    * 120 grams flour
    * 1 large egg
    * 80 ml milk
    * 3/4 tsp salt
    * 1 tsp butter for frying
    * A grind of nutmeg from the nut (optional)

    I fried the spätzle in a touch of butter and split it in half saving half.

    **Kaesespaetzle**

    * 1/2 the Spätzle
    * 60 ml milk
    * Handful of a melty cheese
    * Salt and pepper to taste

    Reheat and add milk. Simmer for a few minutes and then slowly add the cheese.

    never tried spätzle before but man I might search and destroy one soon this looks so heavenly ahahahah

  4. Damn you! Now I want to go back on holiday to Austria lol! I ate Kaesespaetzle a lot there this year, it’s so, so good! The sausage looks delicious as well!
