Sichuan style chile oil blend with a mix of traditional and Mexican chiles. Sichuan chile, sichuan peppercorn, pequin chiles for heat, morita chile for smoke, and one carolina reaper for more heat. I also added toasted pepitas and black and white sesame seeds. The oil (not pictured) was simmered with garlic, shallot, ginger, cinnamon sticks, star anise, cloves, fennel seed. Finish with sesame oil and a pinch of Wangshouyi 13 spice blend.

Sounds killer! Homemade chili oil is great. Never tried it with 13 spice. I looked it up. I’ve seen that stuff at the Asian market, but never knew what to do with it. Lol
