First time ever canning. Any peach tips?

    I don’t have any myself. Last summer I did a big heap of peaches in syrup and they came out real mushy. If anyone can tell me how to prevent that it would be appreciated.

    Also, my peach jam did not jam! So I just wrote “peach compote, family recipe” on the label and said to heck with it. 🙂

    Hot pack makes a firmer, better product than cold pack.

    Light syrup results in a mushier product than heavy.

    You can add mint or cloves to flavor the peaches–I’m a big fan of adding a couple small sprigs of peppermint. YMMV.

    As kids, we used to mix the peach syrup with milk when we’d emptied the jar. It’s pretty good.

    Less cooking time is better. Bring the canner to a boil *first*. But that’s generally true of most canned goods.
