Made a Mediterranean-inspired pizza tonight with Trader Joe’s pizza dough, brushed the outer edge with olive oil and garlic, then a light sauce made from garlic, olive oil, grated tomato and oregano. Topped with zucchini, mushrooms, red onion, green pepper, feta cheese, and a few anchovies. Finished with a drizzle of hot honey and sliced green onion, and served with a side salad of romaine, mushrooms, sundried tomatoes, parmesan cheese, and a red wine vinaigrette.
