I had so many failures before this loaf, mostly due to following recipes without adjusting according to my conditions, like very high humidity, and fairly high room temperature. Ended up with a few dead starters and over-proofed doughs. Anyways I think I got it now! You really get a feeling for it after a while and know how to read your dough.
