βž– Recipe βž–

Cucumber Smoked Salmon

Ingredients –

1 – Cucumber
60g – Smoked Salmon
1/2 Small – Red Onion
2 Tbsp – Cream Cheese
2g (0.1oz) – Fresh Dill, Chopped
2 tsp – Capers, Washed
Salt & Pepper
MSG (Optional)

Method –

Slice cucumber into thin rounds. Use a mandolin for the best accuracy. Place all ingredients into a bowl or container and mix to combine. Serve and dig in.

Korean Cucumber Salad

Ingredients –

1 – Cucumber
2 tsp (10ml) – Light Soy Sauce
2 1/2 Tbsp (50ml) – Rice Wine Vinegar
2 tsp (20g) – Honey
2 tsp (10ml) – Sesame Oil
2 – Spring Onions (Scallions), Thinly Sliced
1 1/2 tsp – Gochugaru (Korean Chilli Flakes)
2 tsp – Sesame Seeds
2g (0.1oz) – Coriander (Cilantro), Chopped
Salt & Pepper

Method –

Slice the cucumber into thin rounds. Use a mandolin for the best accuracy. Place all ingredients in a bowl or container and mix to combine. Serve and dig in.

Cucumber Onion, Tomato, Dill Salad

Ingredients –

1 – Cucumber, Chopped
250g – Cherry Tomatoes, Halved
1/2 – Red Onion, Thinly Sliced
1/3 Cup – Mixed Herbs, Dill, Mint, Flat Leaf Parsley, Picked

Red Wine Vinaigrette –

2 Tbsp (40ml) – Red Wine Vinegar
1 1/2 tsp (6g) – Onion Powder
1 – Garlic Clove, Grated
1/4 Cup (60ml) – Extra Virgin Olive Oil
Salt and Pepper

Method –

Slice cucumber into thin rounds. Use a mandolin for the best accuracy. Place all ingredients into a bowl or container and mix to combine. Serve and dig in.

To make the vinaigrette, add all the ingredients to a bowl except the extra virgin olive oil and whisk to combine. While whisking, slowly pour in the oil and whisk until combined.

Recipe Notes –

Gochugaru is a coarsely ground Korean chilli powder that is similar to crushed red pepper flakes in texture. It is traditionally made from sun-dried peppers without the seeds. If you can’t find it, don’t stress. You can use a small pinch of ground chilli flakes instead. Please note, though, that chilli flakes are a lot spicier than gochugaru, so please don’t blow your socks offβ€”unless you like that, of course.

  3. Definitely don't need MSG on any recipe, sorry Uncle Roger. Re: the plastic containers, soon to be banned in South Australia, unless they are the correct plastic.

  4. for the 2nd one, would you recommend either chilli powder (mild) or chilli flakes as an alternative if you cant get gochugaru?

Salads are so versatile, can add anything to it as per the region you're in…all the above salads look so delicious…and not to be biased πŸ˜‚ i also choose the DIG IN recipe…thats very much close to the indian kuchumber minus and adding few ingredients, just like the spanish cucumber salad…. A nice fun video…

  6. Nothing wrong with MSG – only a lot of old fashioned racially biased badmouthing. Pls folks, do your research before jumping on the hate wagon. MSG is literally just salt and sugar.
