I use to be huge into sourdough, but stopped when covid took over (working from home, pregnant and home schooling).

Getting back into it now, and following the perfect loaf recipe and timing (best sourdough loaf). Flour is whole wheat from Walmart and white flour from Costco (Canada white).

Baked in a Dutch Oven at 500 for 25 minutes and then uncovered for another 20, proofed over night. Slept in so likely over proofed 2-3 hours from the website recommendations.

Thoughts?

    Seriously though, this looks good and you should do whatever keeps you baking enjoyable bread
