Second, it was my fault. I missed the rule about not posting 2X in 24 hrs.

I am reposting because I don't want it to seem like I just ignored questions. I love to help people as best as I can.

Someone had a question about icing consistency. To me the consistency doesn't matter so much as making sure that there are no clumps of sugar. These cakes I decorated professionally in a bakery, so I had no control over the consistency (someone else made the icing). I think it makes it more difficult when the icing is super stiff or super soft, though.

As far as the scroll work, I encourage anyone to just start with one scroll, and then kind of doodle on the cake. Let your hand go wherever and see what happens. Of course, you could anyways practice on parchment paper so you don't have to scrape a cake top off if you don't like it. That's how I developed my scroll work.
