My 11th try at making sourdough bread, how does it look? There has been a lot of trailers and erworben in the oast but my most recently results have come out nicely fluffy on the inside and crunches on the outside like this 🙂

I used 500g wheat flour, 310ml water, 100g starter and 10g salt. 1. Mix water and flour into a dough and let it sit for 40min. 2. Add in the other ingredients and knead well. 3. Over the time of 3h, do stretches and folds and coil folds. 4. Let bulk ferment until dough double in size. 5. Proof until the dough passed the Finger test. 6. Cold ferment over night

Quick question for you though. I just recently purchased those silicon bread slings and they are awesome, but what do you do with the excess side straps when you remove the lid halfway through? I just made a loaf in the DO last night, and after I uncovered it the straps just laid on the top leaving a wide strip down the middle of my loaf that didn’t get as brown.
