This is my favorite bake to date!

300g bread flour
50g wheat flour
70g starter
255g water
7g salt

Mix starter, water and flours, rest 30 mins
Add salt, rest 30 mins
1 stretch and fold rest 30 mins
3 coil folds rest 30 mins ea
Bulk ferment 2-3 hours
Shape
Cold retard 6-7 hours
Preheat 480 for Atleast 30 mins
Cook covered 20mins
420 uncovered 20mins
