I’m feeling a bit silly. I just canned dilled zucchini spears, and I took the spear idea very literally, so I kept all the short pieces out to use later for cooking. From your pictures, it seems that I could put the small pieces in.
Those beets look luscious.

What variety of beets are these? The color is gorgeous. My Detroit Dark Reds seem to fade in the canner and the color never really comes back.
