I don’t think shaping the potatoes is doing you any favors. A finely chopped gremotlata just on the meat might look cleaner. Add a vegetable if you want more going on.

Who was running the lawn mower that close to the kitchen? (Sorry, kidding).
Looks super tasty. Everyone saying “add this” or “add that”. Sure, you could add some decoration or change the dish, but I think you just need to do less.
Heap of potatoes on a grade, cozy that beautiful short rib up to it and then a stroke of herbs. Torn herbs are fine (IMO). No one is going to complain about a hearty, rustic dish/plating.

First: I’d demolish this plate. A good braised short rib will turn me into a monster.
Second: fuck the parsley, do a gremolata like the others recommend. A little citrus will really make that beef pop!
Third: just plop the potatoes down and do something simple like a spoon through the middle or something similar. This forming makes it look premade almost.
You’re not gonna serve this in a fine dining place but any common person would be happy to be served this, and I’d pay for it! We eat with our eyes first but our mouths and stomachs make the final verdict!

We’ve used pea shoots or sometimes corn shoots for garnish for the shortibs at my job.
