I usually have cream of mushroom soup on hand as well as cream of celery! I like adding the celery soup because it adds lots of flavor!😚

I wanted to mention, Katherine, I made some enchiladas and was feeling lazy, so after I gave my corn tortillas a quick warm-up in oil in the skillet, i put in the Colby-Jack marbled snack sticks of cheese and finely chopped onion, and those snack sticks melted beautifully in each tortilla!! What we won't do to save a few minutes!! I used an enchilada sauce this time, but I also like to put some chili with NO beans (That's Texas style, y'all–no beans!). But your dish above, the first halfway cool day, I am making it!!
