Today's lunch is lentil soup!

For 4-5 servings
500gr small brown lentils,
1 chopped dry onion,
1-2 chopped garlic cloves,
1 chopped tomato,
1 chopped sweet red pepper,
2 small or 1 big carrot in thin slices,
1 tablespoon tomato paste, 400-500gr tomato juice,Sweet paprika, 2 Bay leaves, Oregano (I personally dislike oregano in Fakes but it suits them very well most people use it), Salt,Olive oil,
Water to cover all the ingredients twice.

Boil only the lentils for 5 minutes and throw away the first brown water. Add water again and boil everything together until most of the water is absorbed in mid heat (in my kitchen on a scale of 1-9 I boil it at 6-7), and the soup becomes thicker for around 45-60 minutes. Some lentils may require to boil longer so try and if they're a bit hard add more water and boil more. Sprinkle a bit of raw olive oil on top and red wine vinegar in your plate. As a side I eat roasted red peppers in Brine with olive oil and vinegar on top and Feta. Bread too because you can dive in the soup!

    Love this! Just remember to never skip adding vinegar at the end bc it creates the chemical reaction necessary that makes the very rich iron in fakes to be absorbed by your body. Otherwise it just comes in and eventually out.
