Did I pick these too late? Would they still turn out alright if I canned them?

    If they are the flavor and texture that you would expect when you eat them raw, then your timing is perfectly fine. Are you pickling?

    From my experience, when beans look like that they tend to be too fibrous.

    The slim ones no bulging are usually the best – save some seeds from these for next year – they are to tough to eat fresh and have heard that people do out of necessity
    Boil the heck out of them to make them edible – i would not can these
